Gluten-free Pancakes with Blueberry, Maple Syrup and Clementine


Mrs Egg’s birthday today, so I made these for breakfast. They’re gluten-free and have no dairy in them. They would be vegan if there weren’t egg whites in them, but there are egg whites in them, so they’re not vegan. The texture reminded me of French buckwheat crêpes, very delicate and doily-like with lots of little holes producing a beautifully crisp and easily shattered perimeter.
